My husband's gaspacho recipe

Have I told you that I am a lucky woman - my husband is fond of cooking. He prepares a lot of delicious meals and treats me well. Gaspacho soup is his summer hit. He spent a month in Andalucia (Spain) in the last year and was taught by local people how to prepare the real andalucian gaspacho!
Ingredients: 8 sweet tomatoes, 1 sweet red peper, 250 grams of bread, 1 onion, 1/2 of a garlic clove, ice, 250 ml of cold water , 1/4 cup of apple vinegar, 1/3 cup of  sunflower-seed oil.
Method: wash all ingredients, cut tomatoes, a peper and an onion in pieces, crush a garlic clove. Put all ingredients into a big pan, add oil, vinegar, some salt and sugar. Add some water. Mix the mixture of vegetables thoroughly by a blender. Serve the soup as you want. Bon appetit!
P.S. My husband's comments: you should be careful with a garlic, don't add more than 1/2 of a clove otherwise you would prepare russian tomato cream known as "hrenovina".

Cooling Mojito

The hot summer is killing me. I feel mysels boiled and stupid. Mojito and Gaspacho are two things that I can drink and eat.
Ingredients for Mojito: 2 large sprig spearmint, couple wedges of juicy lime, 2 tea spoon of sugar, 2 oz white rum, ice – crushed is best, small cubed is okay too, club soda.
Place a sprig worth of mint leaves, sugar, and a wedge of lime in a tall glass. Tall highball glass preferred. Add crushed ice, rum, and stir well to dissolve sugar to your liking. Top off with club soda and stir lightly to incorporate. Garnish with fresh sprig of mint and an wheel of lime.

Green living


Being a vegetarian is not so boring. In this hot summer time you can try something light and green as a green soup.

You will need 1 yellow onion, 3 medium-sized zucchinis, 2 parsnips, 3.5 oz fava beans, shelled (frozen when not fresh), salt and pepper, fresh coriander, olive oil, 3 cups water, a few pink radishes.

To prepare the soup, take a large thick-bottomed pot and cook the onion in 2 Tbsp olive oil for a few min. Peel the parsnips. Wash the zucchinis and dice all vegetables coarsely. Add them to the onions and cook for 5 min. Cover with the water and continue to cook for 20 min, or until all vegetables are tender. Add the fava beans and continue to cook for 5 min. Mix your soup with a hand mixer or food processor. Add the chopped coriander, and season with salt and pepper. Serve with a grated pink radish (and cream if you like).
